Jean-Philippe Desjardins hails from the Lower St.-Lawrence region of Quebec. No surprise then that he likes his ingredients as fresh and as wild as possible!

Chef Jean-Philippe swears by the fresh, quality ingredients, he handpicks for baskets and meals at Marché Artisans. "I grew up with games and fresh fish," he says. "For years, I went to pick all kinds of things in the wild. 'Fresh' is in my blood." Judging by the selection of meat and fresh fish on offer, he's true to his word when it comes to front-line ingredients. For this young chef, product traceability comes first.
